Couscous grains with dried apricot

Soak the apricots in warm water or tea. Meanwhile roast the sliced almonds. Cook the couscous adding a spoonful of olive oil.

Make some syrup by cooking the dissolved sugar in 2.5 dl of water. Remove from heat after 20-30 minutes cooking and leave to cool.

Pour the syrup over the couscous stir well then add the pine kernels, pistachio nuts and apricots cut into small pieces.

This dish can be served as a main course for vegetarians or as an accompaniment to meat.
