Dried fruit cake

Ingredients (serves 6) :
- 150 g Currants raisins
- 150 g golden raisins
- 100 g dates
- 100 g soft prunes
- 1 mug of sugar
- 2 cups of water
- 1 teaspoon of bicarbonate of soda
- 125 g butter
- 2 cups of flour
- 1 sachet of yeast
- 2 eggs
- Brandy or Cognac
Recipe :
Preheat the oven to 180°C.
In a large saucepan boil the fruit, sugar and water for approximately 15 minutes.
Meanwhile mix separately the sieved flour and yeast.
Remove the saucepan from the heat and add the bicarbonate of soda (froth will form on the surface this is normal) and the butter.
Add the flour and yeast mix.
Add the beaten eggs.
Pour into a mould and bake for 1 hour at 160°C.
Once cooked, remove the cake from the oven, prick it with a fork without turning it out of the mould.
Sprinkle 2 to 3 tablespoons of brandy or Cognac over the cake.
