Roast pork with dried fruit

Preparation time : 20 min
Cooking time : approximately 1hour

Ingredients (serves 6) :

  • 1 pork joint approximately 1 kg
  • 2 onions
  • 5 un-treated oranges
  • 2 small bowls of dried fruit : soft prunes, dates, apricots, raisins, almonds
  • 1 teaspoon of allspice
  • 2 tablespoons of oil
  • salt and milled pepper

Recipe :

In a saucepan, lightly fry the sliced onion, then the pork joint on all sides, season with salt and pepper.

When browned, add the juice from 2 oranges, cover and cook over a low heat for approximately 30 minutes, turning the meat over from time to time.

Add the juice from 2 more oranges, the dried fruit and allspice, then add the remaining orange, which has been washed and cut into slices.

Finish cooking (approximately 30 minutes, depending on the weight of the joint) over a low heat with the lid on.
